Thailand's Prince of Soups - Spicy Peanut
Ingredients
1 TB vegetable oil
1 cup onions, sliced
1 tsp curry powder
1/4 tsp red pepper
1/4 tsp ginger root, ground
4 cups vegetable broth
2 cups sliced carrots
1/2 cup smooth peanut butter
1/2 cup unsweetened coconut milk
1/2 cup milk
Method
In a medium-large saucepan, heat the oil over medium heat. Add onions
and cook 2 minutes, stirring all the while. Stir in the curry powder,
red pepper and ginger until absorbed. Add the broth and bring to
a boil, add the carrots and cook uncovered at medium heat for 30-35
minutes. Place soup and peanut butter into blender (half at a time,
most likely.) Puree. Return puree to pot. Stir in the coconut and
dairy milk. Cook on low until heated thoroughly.
Serves between 4 and 6 as a starter
